Do you have lots of apples left over from the apple taste test you did with the kids? You did do that, right?
If you went apple picking this autumn I'm guessing you A) have pounds and pounds of apples left over, and B) are sick of applesauce. In any case, you need to try this yummy apple chip recipe. It's a perfect fall snack for kids.
It's a very simple recipe, but you need to be able to set aside a large chunk of time. The perfect time is when you wake up at 4am and can't go back to sleep because your 3 year old keeps kicking you in the head. Not that that ever happens to me.
Slice apples about ⅛ inch thick and remove seeds. I don't have a mandoline so my slices were a little uneven. But that's okay. I put my imperfections on display so you can feel more competent about your skills in comparison! You could use an apple corer, but I like the aesthetic of the star shape. Pretty, right?
Place slices on a parchment paper-lined baking tray. If you have a silicone-liner like Silpat, by all means, use that. I sprinkled half the slices with cinnamon, but my husband doesn't like cinnamon (I know!) so I left some plain. Lots of recipes out there use sugar. Really? Apples are already sweet. You do not need to add sugar, people.
Bake at 225°F for about 2 hours, flipping several times during cooking. Here's my full disclosure: it seems every time I make these, the cooking time is different -- probably due to my lack of mandoline and rather thickly cut slices. Also, some apples have a higher water content than other, so will take longer. However, it is nearly impossible to overcook these so simply leave in the oven, flipping every now and then until they reach the desired state of crispiness and yumminess. If you have to leave the house, turn off the oven and leave the slices inside. They will be fine.
If you miraculously make more than you can eat in a day (that has never happened to me), store in an airtight container and snack on them with hot apple cider and cranberry ice sticks.
